Food & Recipes: Edamame and Veggie Rice Bowl
Serves: 2 Calories: 400
Ingredients200g brown rice
300g roasted vegetables (Red onion, mixed bell pepper, courgette and baby tomatoes) Cooked in 1 ½ tbsp of olive oil
80g edamame (beans)
½ avocado, diced
2 sliced spring onions
A handful of fresh coriander
4 tablespoons low fat Vinaigrette
Method1. Roast the vegetables in 1 ½ tbsp of olive oil for 30-40 minuets.
2. Cook the brown rice for 20-25 minutes.
3. Once cooked, arrange rice, veggies, edamame and avocado in a bowl.
4. Top with spring onions and coriander.
5. Drizzle with vinaigrette just before serving.
